Kettle corn.

So, I have a commercial popcorn popper at my house.. ( like they have at the movie theatres)..

I have been wondering what ingrediants are actually in Kettle corn...

I looked it up on internet, and several recipes all were the same. equal amouns of oil AND sugar, and popcorn,heat, mix and you got it....

So i gave it a try in my machine, use canola oil, sugar, popcorn..... NO butter or salt additives.. Worked out great.. Made 5 gallons of Kettle Corn..  couldn't believe it!.

Now the only thing i wonder about is the popcorn at SDC is brown in color, so are they using "brown sugar".. mine is white as snow,...

BUT taste great!

You should try it with brown sugar. It would prob. be yummy! I imagine delightful even! Maybe ther is even a way to use molasses. ???

Add cinnamon.  The kettle corn guy at our farmer's market makes his with cinnamon (very lightly), and it's great!  That might give it the "brownish" color.

I thought about molasses, but am afraid it might thicken up too much in popper...

Cinnamon? hmm??  might try that..

I have tried to recreate the same at home on the stove top...made some great caramel corn, but when I attempted the kettle corn, I ended up with a potful of carbon...not good eats

I think molasses might burn.  What a mess that would be!

Corn syrup (Karo), and let it caramelize just a very, very little bit.

Kettle corn is candy (cooked sugar), and time and temperature are very sensitive.
